Therefore, this will not be anything that I’ve just read somewhere, but only those recipes that I’ve tried myself and that I’ve enjoyed …

One of the tastiest ways to get rid of Ground-elder, also called Goutweed.
Ground-elder buns
For about 20 small buns of 5 cm (2 inches) diameter you need
- 1 large roll of puff pastry from the cooling shelf
- 1 pack of cream cheese (also vegan possible)
- about 20 large ground-elder leaves
- some salt, some pepper
Tip: use vegetable seasoning salt and mix in half a clove of garlic, finely chopped.
- Wash the leaves, spin dry, cut off as much of the leaf stalks as possible and chop finely.
- Roll out the puff pastry to approx. 20×30 cm (8×12 inches)
- Spread with cream cheese, sprinkle with ground-elder, season
- Roll up lengthwise
- Cut into slices about 1-1.5 cm (1/2 inch)
- Place on baking paper
- bake 180° in a fan oven for approx. 10-15 minutes.
Ground-elder lemonade / Ground-elder Royal
- For about 2 litres, you need
- 20 large Ground-elder leaves with long leaf stalks
- 1 litre apple juice (unfiltered, naturally cloudy
- 1 organic lemon
- 1 – 2 litres water (still or sparkling)
- Tip: tastes wonderfully refreshing with a dash of champagne
(„Ground-elder royal“)
- Wash the leaves
- Prick them with a sharp knife and tie them together
- Put them in a large jug with the help of a wooden spoon
- Add the sliced lemon and fill up with the apple juice
- Leave in the fridge for at least 3 hours, preferably overnight.
- Take out the ground-elder leaves, squeeze them out and top up with water
- Mix according to taste.
Why „Ground-elder royal“?
In German Ground-elder is called Giersch (pronounced „geersh“)
Because Giersch and Kir sound similar, I call the champagne version „Giersch royal“ in reference to the original Kir royal.
